We place it in a horizontal position and remove the stopper and cork.
We insert the cannula and rotate it to the vertical (closed) position.
We tap it lightly.
After rinsing the barrel inside and out, fill it with drinking water to the top.
Wet the barrel on all surfaces, so that it "waters" the wood. We will find that there are leaks from various points for a few days. For this reason, we regularly empty the barrel. It is very important to leave the barrel full of water for 15 days, so that the humidity of the wood reaches 70-80%. After the barrel has "sealed", we empty the water and let it drain with the hole facing down for 5 minutes.
Then, we fill it with wine or tsipouro without any further process.
