To maintain your barrels, you should follow the following procedure:

 
Barrel maintenance - step 1

STEP 1

It is very important to rinse the barrel very well from wine residues. Once the barrel is empty of wine, fill it with 10-20 liters of drinking water, preferably hot (60 - 80 oC).

Barrel maintenance - 2nd step

STEP 2

Rotate the barrel in every direction, in such a way that the water rinses every inner side of the barrel. Repeat the process for at least 3 minutes. Finally, we empty the water.

Barrel maintenance - 3rd step

STEP 3

Optionally, for better sterilization of the barrel, we use the sulfur pastille. (Sulfur lozenges are recognized by the General State Chemistry and the Ministry of Health and are based on international laws for the protection of wine production).

STEP 4

We tie the lozenge to a wire and light it.

Barrel maintenance - 5th step

STEP 5

Once it starts to burn, we place it inside the barrel.

Barrel maintenance - 6th step

STEP 6

The gas resulting from the use of the pastille covers the internal surfaces of the barrel and sterilizes it from any oxidation. This is how we best protect the quality of the barrel for the next year.

Barrel maintenance - 7th step

STEP 7

After it has turned into gas, we remove the wire with the residue of the pastille and seal the barrel with the cap.

STEP 8

Store the barrel in a cool, shady place. Before reusing it, tighten the rings and follow the barrel usage instructions
